Albero ’10 Tempranillo Barrica. Organic, vegan. Soft, complex, balanced acidity. Spice, cocoa, red fruit, vanilla, very dry. From D.O. Utiel-Requena (Valencia) Spain. Aged 4 months in American oak. Bodegas Irzano is Spain’s oldest winery, founded in 1335. A nice wine, and very affordable. Purchased at Trader Joe’s, Chicago.

Main Course at Whistlestop Restaurant Spanish dinner w VB winery…

Marinated Roast Fillet of Pork Studded with Chorizo sausage, smokey mashed potato, a specialllty of the area, with sauteed brussel sprouts mixed with roasted chesnuts. Third course last night at Whistlestop: Paella paired w VB Tempranillo.

Soup was the second course. This third course was in keeping with the tradition of game meats in the Extremadura region of Spain. The Paella was with rabbit, chorizo sausage, shrimp and mussels.
